Commercial Oven Not Heating: Causes and Repair Costs

Ovens fail in two ways: completely (no heat) and quietly (uneven or slow heating that ruins product for weeks before anyone blames the oven). Both have short suspect lists.

No code on the display does not mean no fault: several of these ovens shut a burner down with nothing but a dark cavity to show for it. The checks below apply either way.

Six checks before you call

None of these need a technician, all of them are things a service company will check first anyway, and any one of them turns a paid call-out into a two-minute fix. Do not attempt them if you are not authorised to, and never bypass a safety device to keep cooking.

  1. Is the gas actually on? Quick-disconnect fittings collect grease and stop seating fully, and a shut-off valve behind the line gets knocked closed by a mop handle more often than anyone admits. Look at the valve, not just the appliance.
  2. Is it plugged in, and is the outlet live? Gas ovens still need power for igniters, controls and blowers. Check the plug, the GFI and the breaker. A gas oven with no electricity behaves exactly like a gas oven with no gas.
  3. Has the high-limit tripped? Usually a red reset button. If it clicks when pressed, it had tripped. Reset it once. If it trips again, stop and call: a high limit doing its job twice is telling you something is genuinely overheating.
  4. Is the door closing properly? Many ovens will not fire with the door switch open, and a sagging hinge or crushed gasket can hold it open by a few millimetres you cannot see.
  5. Did anything change? A deep clean, a new delivery blocking a vent, a different member of staff on opening. Faults that appear the morning after a clean are usually reassembly, not failure.
  6. Is there a code on the display? Write it down before clearing it. Codes are the single most useful thing you can give a technician on the phone, and clearing one destroys the evidence.

What the answers tell a technician

The pattern of failure narrows the cause faster than the symptom does, which is why a good dispatcher asks these questions rather than just booking a visit.

Gas, electric, convection and combi fail differently

Telling the company which you have, in those words, saves a wasted visit. Deck and range ovens are mechanically simple and usually cheap to fix, so they are almost always worth repairing. Convection ovens add a blower, a door switch and often a two-speed motor, and a fan fault presents as a heat fault. Electric ovens fail progressively, because elements go one at a time and the oven keeps limping. Combi ovens are a different class of machine: water quality drives most of their faults, steam generator scale is the single biggest cause of large bills, and their control boards can approach the value of an older oven. If yours is a combi, ask whether the company services your brand specifically rather than assuming.

What to have ready when you call

Uneven or slow cooking

Check the cheap causes first: overloaded racks blocking airflow, a torn door gasket, or a door that no longer latches tight. Then verify calibration with an independent thermometer at the rack center; meaningful drift from the setpoint means thermostat calibration or replacement. On convection ovens, a blower motor losing torque produces hot and cold zones long before it seizes.

What repairs typically cost

Planning ranges, not quotes: igniters, pilots, door gaskets, and high-limit switches typically land in the low hundreds including the call. Thermostats and gas valves usually run mid hundreds. Blower motors and electric element jobs range widely with access and brand, from mid hundreds toward four figures on large units, and combi oven steam-side repairs commonly reach four figures. Prevention

Keep door gaskets and hinges on the PM checklist, calibrate quarterly, and clean combi ovens and their water filtration on the manufacturer schedule; scale is the number one combi killer in hard water areas.
