Which one do you need?

The quickest way to tell is what the equipment does rather than what it is called. Anything that makes cold is refrigeration, including ice machines, and needs a refrigeration technician. Anything that makes heat with gas needs someone licensed for commercial gas. A dish machine sits between plumbing and equipment repair and is usually its own specialism. A hood is ventilation, and the suppression system inside it is a fire trade with its own certification.
