Pilot Light Keeps Going Out: Thermocouple Fixes

The five-dollar diagnosis
Hold the knob, pilot lights, release the knob, pilot dies. That exact pattern points at the thermocouple: a pencil-thin probe sitting in the pilot flame that generates a few millivolts of electricity when hot. That trickle of power is what holds the gas safety valve open. Worn, greasy, or nudged out of the flame, it stops generating, and the valve, correctly, refuses to let gas flow without proof of flame.
What an operator can safely do
Relight per the instruction plate, holding the knob a full 30 to 60 seconds before releasing, because a cold thermocouple needs time to make voltage. Look at the pilot flame itself: it should be steady and blue, enveloping the thermocouple tip. A lazy yellow flame or one blowing sideways suggests a partly clogged pilot orifice or a draft: check for a new fan, a propped door, or a hood balance change. Keep the area clean; grease and crumbs choke pilots.
What is technician work
Replacing a thermocouple or cleaning a pilot orifice involves opening gas train components, so on commercial equipment it belongs to a technician, and the good news is that it is quick, common, and one of the cheapest repairs in the book. If a new thermocouple does not hold, the safety valve itself may be failing; that is the same visit. Spark ignition equipment without a standing pilot uses a flame sensor instead; the symptom equivalent is clicking without ignition or burners that light and drop out, and the common cause is a dirty sensor.
Never do this
Never wedge, clamp, or bypass a gas valve to keep equipment running. The valve dropping out is the safety system working. An appliance that will not hold a pilot is an inconvenience; defeated gas safeties are how kitchens burn.
