How to Clean a Commercial Ice Machine Properly

Ice is food. Health departments treat it that way, and a slimy ice machine is one of the most commonly cited violations in restaurant inspections. Cleaning is also the cheapest repair you will ever do: scale buildup is the root cause behind a large share of the fault codes in our error-code library, from long freeze cycles to probe faults.

Two jobs, two chemicals

Descaling dissolves mineral scale out of the water system using an acid-based ice machine cleaner. Sanitizing kills slime, mold, and bacteria using a sanitizer solution. They are separate steps, in that order, and the common shortcut, descaling without sanitizing, leaves exactly the biological growth inspectors look for. Manufacturers specify both every time.

How often

The baseline across manufacturers is at least twice a year, moving to quarterly with hard water. Two accelerators surprise people: airborne yeast (machines near bakeries, pizza stations, or bar taps grow slime faster; Scotsman notes that carbon filters which strip chlorine from the water make this worse) and greasy air, which clogs air filters and condensers (clean those at least twice a year, monthly in a hard-working line kitchen). The cleaning reminder light on modern machines is a timer, not a sensor: it does not know your water.

The general procedure

Details vary by brand and the manual governs, but the shape is consistent. End the current cycle and remove or melt out the ice (never serve ice made during cleaning). Mix the manufacturer-specified cleaner with warm water at the stated ratio, add it to the water system, and run the machine's clean cycle so the solution circulates; keep the reservoir fed until the dose is used. Drain, then repeat the run with sanitizer solution. Wipe down surfaces the solution cannot reach, sanitize the bin interior with the same solution, discard all ice made during the process, and restore normal operation. On most machines, completing the built-in clean cycle is also what resets the cleaning reminder light. Budget one to two hours.

The mistakes that cost money

Use the cleaner your manufacturer specifies, not generic descaler: several brands nickel-plate their evaporators, and the wrong acid strips the plating, which is a four-figure evaporator replacement and a warranty argument you will lose. Never chip ice or scale off an evaporator with tools. Handle ice machine cleaner as the acid it is: gloves and eye protection, and flush skin with water on contact. And do not mix cleaner and sanitizer together; they neutralize each other and can react.

What cleaning does not fix

A machine that still throws codes after a full clean has a mechanical problem: look the code up by brand (Scotsman cubers, Scotsman flakers, Manitowoc, Hoshizaki, Ice-O-Matic) and match the symptom in our troubleshooting guide.
