Steam equipment dies of thirst problems

Every gallon a steamer boils leaves its minerals behind, and the hotter the surface, the faster scale plates onto it. Elements overheat under their mineral blanket and burn out, probes read wrong through their crust, level sensors stop sensing, and the boiler takes longer to make less steam. How often

Manufacturer intervals typically land between monthly and quarterly by water hardness and duty; many machines run a delime reminder, and like every cleaning timer it does not know your water, so hard-water kitchens should tighten it. White crust at the door, on probes, or in the cavity means you are already behind.

The general procedure

The shape is consistent, the details are your manual's: cool the unit, run the built-in delime or cleaning mode with the deliming chemical the manufacturer specifies at the stated dilution, let it circulate the stated time, then rinse thoroughly through at least one full cycle before cooking. Wear gloves and eye protection; delimers are acids. Never mix them with other chemicals, and never chip scale off elements or probes with tools.

Prevention beats treatment

The kitchens that rarely delime are the ones with treated feed water: a scale-inhibiting filter system or, for heavy steam users in hard water, reverse osmosis sized for the equipment. Treatment costs less than one element replacement per year in most hard-water markets, and several manufacturers effectively require it, writing water quality specs into the warranty. Change filter cartridges on schedule; an exhausted cartridge protects nothing.

When it is already a repair

No steam, breakers tripping, over-temperature faults that return right after a delime, or a boiler that will not fill or drain are past cleaning: element, probe, and valve work is technician territory. Put deliming on your PM schedule, and if the machine is old and scale-scarred, run the numbers in the repair-or-replace calculator before approving a big boiler job.
