A dead fryer is not a repair bill; it is a revenue leak with a repair bill attached. This estimates the leak so you can decide how much an emergency call is actually worth.
How to use the number
Compare the daily loss against the emergency or after-hours premium a service company quotes. If downtime costs $1,300 a day, a $250 after-hours surcharge that saves a day pays for itself five times over. The estimate is deliberately simple: it does not model partial menu substitutions or reputation effects, so treat it as a floor, not a ceiling. What the number is for
The point of estimating downtime is to make one decision less emotional: whether to pay an after-hours premium tonight or wait until tomorrow. Operators consistently underestimate this, because the repair bill arrives as an invoice and the lost revenue never does.
Three things the calculator cannot see, which usually push the real cost higher:
- Menu items you cannot sell at all. A dead fryer does not reduce covers by a percentage; it removes a section of the menu, and tables that wanted it often leave rather than reorder.
- Staff you are paying anyway. A kitchen running at half capacity carries the same labour cost, so the loss is revenue and wages together.
- The second failure. Equipment run hard to cover for a dead unit is equipment more likely to fail next. A fryer carrying a griddle's load is not doing so for free.
Against that, the honest counterweight: an emergency call-out will not always fix it tonight. If the part is not on the van, you pay the premium and still wait, which is why our questions page suggests asking whether the part is stocked locally before agreeing to an after-hours visit.
