Shutting Down a Dish Machine for an Extended Closure

A dish machine left full of water and food soil for a month does not just smell bad on reopening day. Standing water breeds odor and corrosion, soil hardens where it sat, and the restart turns into a service call plus lost days. The shutdown below takes under an hour and is the difference between flipping supplies back on and paying for a rebuild of your opening week.
Kill the supplies at the source
Power off at the disconnect switch or breaker, not just the machine's own controls. Close the water supply at the shutoff ahead of the machine, and do the same for gas or steam if your machine heats with either. The point of going to the source is that valves and elements cannot leak, cycle, or dry-fire on a machine that has no supplies to draw from.
Strip it and clean everything removable
Everything that comes out, comes out: curtains, scrap baskets, strainer pans, wash arms, and overflow tubes. Wash them at the sink rather than in place, since they will sit for weeks with whatever is left on them. With the wash arms out, clear the nozzles and check that each O-ring is present and pliable, replacing any that are not. This is the same checklist as a thorough nightly clean, done to a higher standard because nothing will rinse away tomorrow.
Drain completely and let it dry
Drain every tank, then spray the interior down so remaining soil follows the water out. Machines with pumped drains need one extra step: after flushing, restore power and water long enough to fill, then power down and let the pump push everything out, so no flush water is left standing in the sump. Put the cleaned parts back where they live, wipe the exterior with a mineral oil based stainless polish, and leave the doors open for the whole closure so the interior stays dry.
The freeze warning that matters
All of the above assumes the building stays above freezing. If it will not, residual water in pumps, valves, and lines can crack components over one cold night, and draining alone does not reliably clear every low spot. Manufacturers treat below-freezing storage as its own procedure. Have a service company winterize the machine rather than gambling a compressor-sized repair bill on gravity.
Restart day
Reopening is the shutdown in reverse: supplies on, normal startup, and then patience. Run empty cycles and verify wash temperature, rinse temperature, and sanitizer concentration before the first rack of real ware goes through. After months offline, consider a professional startup visit; verifying temperatures and chemical concentrations with calibrated instruments is cheap insurance against reopening on a machine that is not actually sanitizing.
