Commercial Kitchen Repair Glossary
Plain-English definitions of the terms that appear on service quotes, equipment manuals and inspection reports. If a technician or an invoice uses a term you have not met before, it is probably here.
Terms used in commercial kitchen service
The terms that show up on service invoices, spec sheets, and our error-code tables, in plain language.
- CFESA
- The Commercial Food Equipment Service Association, the trade body that trains and certifies service companies and technicians. CFESA certification is a meaningful quality signal; certified companies are flagged in our directory.
- EPA 608 certification
- The federal certification legally required to open refrigerant circuits. Any repair that touches refrigerant charge, compressors, or sealed-system components requires a 608-certified technician; this is why our code tables mark refrigerant-side work as technician territory.
- OEM parts
- Original equipment manufacturer parts, made by or for the equipment brand. Warranties generally require them on covered repairs, and authorized service companies stock them.
- Factory-authorized service agent
- A company designated by a manufacturer to perform warranty repairs, billed to the factory. During the warranty period, using anyone else on a covered failure usually forfeits the claim.
- High limit
- A safety device that cuts heating when temperature passes a hard threshold, on fryers, ovens, and boilers. A tripped high limit means something overheated; never bypass one, and never keep resetting one without diagnosis.
- Thermocouple
- A probe that generates a small voltage when heated by a pilot flame, holding the gas safety valve open. The classic cause of a pilot that lights but will not stay lit.
- Thermistor / probe
- A temperature sensor whose electrical resistance changes with temperature. Most temperature-related error codes are the controller noticing a probe reading outside its valid range.
- TXV (thermostatic expansion valve)
- The refrigeration valve that meters refrigerant into the evaporator. TXV faults show up as poor cooling or flooding faults, and they are strictly refrigerant-side, technician territory.
- Condenser / evaporator
- The two coils of a refrigeration system: the condenser rejects heat (keep it clean and ventilated, the top operator task in refrigeration) and the evaporator absorbs it inside the cabinet (ice buildup on it points at defrost problems).
- Hot gas valve
- A valve that routes hot refrigerant to the evaporator during ice machine harvest to release the ice. Leaky hot gas valves cause long freeze cycles: a recurring cause behind ice machine codes.
- Defrost cycle
- The scheduled melting of frost off a freezer or cooler evaporator, driven by timers or boards and, in freezers, electric heaters. Failed defrost buries the coil in ice and collapses cooling.
- Nickel-safe cleaner
- Ice machine cleaner formulated for nickel-plated evaporators. Generic descaler strips the plating, ruining the evaporator and the warranty argument.
- FOG / grease interceptor
- Fats, oils, and grease, and the trap or interceptor that catches them before the sewer. Municipal rules commonly require pumping when FOG plus solids reach a quarter of trap depth.
- NFPA 96
- The fire code standard for commercial kitchen ventilation, setting hood and duct cleaning frequency from monthly (solid fuel) to annually (low volume).
- UL 300 / NFPA 17A
- The listing standard for modern wet chemical kitchen fire suppression and the standard governing its semiannual inspection and maintenance.
- PM (preventive maintenance)
- Scheduled inspection and service designed to catch failures before they happen, typically quarterly professional visits layered over weekly operator tasks.
- Trip charge / diagnostic fee
- The base fee to get a technician on site and diagnose, commonly credited toward the repair if you approve it. Ask how it works when booking.
- ATO / AIF
- Frymaster terms: automatic top-off (maintains oil level from a reservoir) and automatic intermittent filtration. Their sensors have their own error codes.
- VFD (variable frequency drive)
- An electronic motor drive controlling fan speed, found in modern combi ovens and ventilation. VFD faults report through the equipment display and are technician work.
- Low-boy / reach-in / walk-in
- Refrigeration formats: undercounter units, upright cabinets, and room-sized boxes. Walk-ins add doors, floors, and remote systems to the failure map.
